Okroshka is a refreshing cold soup from Russia. It’s filled with crisp vegetables and protein for a light meal that comes together in just 30 minutes. I have been eating this on its own as a light meal during summer.
Choices for soup liquid
Kvass is a fermented beverage made from rye bread and yeast, popular in Eastern Europe. It is slightly carbonated with a malty flavor. I found this bottled at a local Eastern European grocery store.
Kefir is a fermented milk beverage with a tangy and creamy flavor. This is easy to find in stores across the US. Add a splash of water to thin it to your desired consistency.
Okroshka
Ingredients
- 2 medium potatoes
- 4 eggs
- 4 persian cucumbers small dice
- 1 bunch radishes small dice
- 2 green onions chopped
- 1/4 cup dill chopped
- 300 g ham small dice
- 4 cups kvass or kefir
- salt
Instructions
- Bring a pot of water to a boil. Add the potatoes to boil for 20-25 minutes, until tender. Halfway through add the eggs to boil for 10 minutes. Transfer potatoes and eggs to an ice water bath to cool. Dice.
- Divide all cut ingredients evenly between 4 bowls. Top each with kvass or kefir and a few ice cubes. Season with salt to taste.
Notes
Ingredients can be cooked and cut ahead of time and stored in the refrigerator. When ready to eat, add the soup liquid to the cut ingredients.
